I have worked in some of the most renowned Michelin-starred restaurants and hotels spanning 8 countries across Europe and Asia. Throughout my 25 years of experience in the F&B industry, I oversaw hotel operations of up to 420 rooms, led teams of culinary chefs, managed food budgets and hygiene standards, developed culinary standards, planned food promotions, provided training and development, and operated F&B outlets and catering services that served up to 1,200 people.

Bar Manager
I am an experienced Bar Manager with over 12 years of proven results in the F&B and hospitality industries. Having managed bars across Europe and Asia, I lead them towards not only great service and concoctions but also business performance and profitability. My expertise has also grown over the years to include consultancy on beverage programmes, staff development and the setup of inventory control systems to ensure profitable stock control.

Pastry Specialist
My love for enjoying and recreating pastries and gourmandises started when I was a little kid. I embarked my culinary journey at fifteen years old in a Michelin star establishment in Salon de Provence. After this experience, the overseas adventure began working at the most prestigious pâtisseries, restaurants and hotels in the five continents. Directing teams across the globe brought flexibility in the way I develop, teach, implement, supervise and evaluate.

Pastry and Pizza Specialist
Riccardo is a pizza maker expert with more than 20 years experience in restaurants and pubs. Coming from the pastry world and bakery, he has been involved with the openings of more than 30 food establishments, from pizza take aways to restaurants that sits to a thousand big. Riccardo’s expertise also includes kitchen and buying administration, food line and conservation. He has partnered with the Kofler group for more than a decade.

Wine Specialist
An accomplished wine and marketing professional with over 20 years of experience in sales & marketing spanning 12 years in regional hospitality/tourism and 15 years in the wine industry. Her extensive exposure in the Asia Pacific as Deputy Sales Director, Asia Quinta de Maipo (QdM) and Regional Sales Manager, Asia for the Mandarin Oriental Hotel Group, Singapore sharpened her business acumen and negotiation skills in establishing a strategic partnership in a widely diversified Asia clientele base.

Designer
Steven Wong, artist, architect, curator, started MAPP (multiple autonomous platforms presents) as a platform for ideas. Wong has worked, significantly for his practice, from a global perspective, staying in Los Angeles, New York, London, Hong Kong and Singapore, and constantly travelling between, a move which seeks to interrogate the western episteme from non-fixed viewpoints. In this, he has absorbed and observed the many strategies employed by institutions of dominance and the conditions necessary for autonomy in art. Presenting the films of Straub/Huillet at UCLA as a performative idea where the viewers become the art objects.
