About Riccardo Scaioli
Riccardo is a pizza maker expert with more than 20 years experience in restaurants and pubs. Coming from the pastry world and bakery, he has been involved with the openings of more than 30 food establishments, from pizza take aways to restaurants that sits to a thousand big. Riccardo’s expertise also includes kitchen and buying administration, food line and conservation. He has partnered with the Kofler group for more than a decade. Riccardo has been involved in a number of courses specialising on natural yeast, “biga”, and different type of doughs namely naples pizza, roman and squared pizza. he has managed a bakery laboratory which produces pre-cooked pizza base. In 2017, Riccardo was involved in an exposition with 5 Stagioni flour that brought him to places like Austria, Bangalore, Jakarta, Paris, Moscow and Taiwan.
